About Ginger

Ginger (Zingiber officinale) is a popular rhizome plant used as a spice and medicinal ingredient. Its rhizome is finger-shaped and swollen at the middle joints. Ginger grows well at an altitude of 0 to 1500 meters above sea level, except for the elephant ginger species which grows at an altitude of 500 to 950 meters. In order to achieve optimal production, it requires rainfall of 2500 to 3000 mm per year, humidity of 80%, and moist soil with a pH of 5.5 to 7.0 and high nutrient content. The soil used for planting ginger should not be waterlogged.
The root is in the form of a rhizome with yellow to reddish fleshy roots that have a pungent odor. Ginger rhizomes, especially those harvested at a young age, do not last long when stored in a warehouse. Therefore, immediate processing is needed to keep them suitable for consumption. To obtain quality ginger rhizomes, ginger should be harvested at an age that is not too young or too old.

The ginger flowers grow from the ground and have an oval shape with a length of 3.5 to 5 cm and a width of 1.5 to 1.75 cm. The flower stem is covered with 5 to 7 scales.

The leaves are pinnate with a length of 15 to 23 mm and a width of 8 to 15 mm. The leaf stalk is finely hairy.

The ginger stem is a pseudostem that can grow up to 30 to 100 cm tall.
